How to bake a perfect cake?
Baking a cake is a nightmare for many. Sometimes it's a bad body, sometimes it's a curdled filling, and when everything seems to be according to our wishes, we fail to decorate the cake. The basis of success is the preparation of the baking form. The first mistake that spoils the entire corpus is the greasing of the edges of the form. Due to the greasy surface, the dough has nowhere to stick during baking, which results in a convex body instead of a beautifully flat body. When filling the cake, we cut off the unevenness, so we lose a significant part of the corpus, it is often necessary to finish baking the cake in order to reach the desired height. For easier removal of the corpus from the mold, it is enough to line the bottom of the mold with baking paper. We simply release the body from the edges of the mold using a knife.
Another stumbling block is the corpus itself. Finding the right recipe so that the corpus is not too stiff and heavy, but not too loose and dry, is really an art. For a smooth and fluffy body, it is necessary to get as much air into it as possible, we achieve this by mixing the dough precisely. Beat the dough without a break, gradually add the other ingredients. Depending on the recipe, we start by beating whole eggs with sugar, or we separately prepare stiff snow from egg whites, which we mix into the dough by hand at the end.
The baking temperature of the corpus needs to be adapted to your own oven, which should range between 160-180°C. The golden rule of any baking is to put the dough in a preheated oven, never in a cold one. We do not open the oven for the first 30 minutes, after 30 minutes we can use a skewer to check whether the dough is baked. If the dough is finished baking, cover it with baking paper or aluminum foil, thanks to which the surface of the body does not remain burnt.
An important attribute of a perfect cake is also perfectly cut dough and straight sheets. Using one knife usually results in crooked, uneven sheets that spoil the final effect of the cake. There are already many aids on the market that can really help you when slicing the corpus. The first lifeline that everyone has at home is thread. All you have to do is prepare the baked body and a thread with a length of min. 1.5 m. We mark the cut on the body, wrap the thread around the body, tie the ends of the thread in front of us, make sure that the thread is in the right place and tighten until two identical sheets are formed. Among the tools available, you can also use an adjustable biscuit cutter or an adjustable carving hoop when dividing the carcass, which will make your work easier.
