Bear Paw Cookies with Cracklings
Gluten-free dough:
- 350 g Liana Cake mix
- 250 g ground pork greaves
- 120 g powdered sugar
- 80 g ground walnuts
- 1 egg
- 1 PL Liana Dutch cocoa 10-12%
- grated zest of half a lemon
- 1 pc Liana Vanilla sugar 10 g
- 1/2 tsp ground cinnamon
Gluten dough:
- 400 g plain flour
- 80 g powdered sugar
- 150 g ground cracklings
- 2 eggs
- 50 g walnuts
- 1 PL Liana Dutch cocoa 10-12%
- grated zest of half a lemon
- 70 g butter
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
For the coating:
- 7 tbsp powdered sugar
- 1/2 tsp nutmeg
- 1 pc Liana Vanilla sugar 10 g

- Weigh all the ingredients and add them to a bowl. Mix and combine by hand or in a food processor. Gluten-free dough is more crumbly, but in the end it is more tender and, in my opinion, tastier. Gluten-free dough is more compact.
- Press into bear paw molds and bake at 180°C for about 20-25 minutes. After baking, let cool for a while and then knock out of the molds. They would break if they were hot.
- Mix powdered sugar, vanilla sugar and ground nutmeg. Coat the paws in the mixture. And we're done. Enjoy!
