  • 400 g plain flour
  • 80 g powdered sugar
  • 150 g ground cracklings
  • 2 eggs
  • 50 g walnuts
  • 1 PL Liana Dutch cocoa 10-12%
  • grated zest of half a lemon
  • 70 g butter
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon

Approach
  1. Weigh all the ingredients and add them to a bowl. Mix and combine by hand or in a food processor. Gluten-free dough is more crumbly, but in the end it is more tender and, in my opinion, tastier. Gluten-free dough is more compact.
  2. Press into bear paw molds and bake at 180°C for about 20-25 minutes. After baking, let cool for a while and then knock out of the molds. They would break if they were hot.
  3. Mix powdered sugar, vanilla sugar and ground nutmeg. Coat the paws in the mixture. And we're done. Enjoy!

Good tip:

If you're worried that the taste of the cracklings will overpower the gluten-free version, feel free to replace some of it with butter.
