Ingredients

For 2 maxi buns:

  • 250 ml whole milk
  • 20 g fresh yeast
  • 2 tbsp granulated sugar
  • 300 g Bakery mix Liana
  • 1 egg
  • 1/3 tsp salt
  • 1 tbsp oil
  • gluten-free flour for dusting
  • oil for brushing the buns and steaming containers

Blueberry filling:

  • 500 g fresh, canned or frozen wild blueberries
  • 1 tbsp powdered sugar depending on the acidity of the blueberries

Crunchy sprinkles:

To finish:

  • 150 g butter for frying
  • 2 tbsp powdered sugar

Approach
  1. Prepare the yeast. Add the yeast and granulated sugar to the lukewarm milk. Mix and leave to activate for about 10 minutes.
  2. Make the dough. Add the Liana Bakery mix , salt, egg and oil to the sourdough. Mix the dough thoroughly with a mixer fitted with dough hooks.

  3. Let rise. Cover the bowl with the dough and let it rise in a warm place for about 30 minutes.
  4. Shape the maxi buns. Divide the risen dough into two equal parts. Roll each part out on a floured work surface into a thicker circle, approximately 1 cm thick.
  5. Fill with blueberries. Place the dough in a smaller bowl and place approximately 250g of blueberries in the middle. If they are more tart, add a little powdered sugar. Bring the edges of the dough together and seal the bun tightly.
  6. Let rise. Lift the bun out of the bowl using the baking paper. Cover both prepared buns with foil and let rise for about 15 more minutes.

  8. Prepare the topping. Mix the Liana white semolina , Liana caramel glaze , sugar and 100 g butter and work into crumbs with your hands.

  9. Bake until crispy. Spread the sprinkles on a baking sheet or put in a hot air fryer. Bake for 15 minutes at 180°C, stir, add the chopped nuts and bake for another 10 minutes.
  10. Finish the buns. Brush the finished maxi bun with melted butter, sprinkle generously with crunchy sprinkles, lightly brush with butter again, and finally dust with powdered sugar.
