Gluten-free hamburger
For the bun we need:
- 250 ml beetroot juice
- 250 ml lukewarm water
- 1 tbsp granulated sugar
- 20 g fresh yeast
- 500 g Liana Rolls mix
- 6 tablespoons lard (leveled)
- 10 g salt
- For brushing: 1 egg
- White sesame
Meat:
- 250 g minced pork
- 250 g minced beef
- 2 tsp salt
- 1/3 tsp black pepper
Dressing:
- 4 tbsp mayonnaise
- 3 tbsp mustard
- 1 tbsp ketchup
- 5 small pickled cucumbers
- 10 pieces of chives
- 8 sprigs of parsley (we will only use the leaves)
- 1 tsp dried garlic
- 1/4 tsp white pepper
- Salt to taste
To finish:
- 2 large tomatoes
- 1/4 head of iceberg lettuce
- 150 g English bacon
- Sliced cheese (ideally cheddar)
- First, activate the yeast. Mix water, sugar and yeast. When the yeast foams, add beetroot juice, flour, salt and lard. Knead the dough. Wrap the bowl in foil and let it rise for 45 minutes. Then knead the dough and shape it into a roll. Cut into 120 g pieces. Shape into balls using a circular motion. Let rise for 15 minutes. Brush the risen buns with beaten egg and sprinkle with sesame seeds. Bake for 20–25 minutes at 200 °C.
- Meanwhile, prepare the meat. Salt and pepper the minced meat and mix well. Form into balls and flatten between two sheets of baking paper.
- Dressing: finely chop the chives and parsley. Dice the pickles into small cubes. Mix the mayonnaise, mustard, herbs, pickles, pepper, dried garlic and ketchup. Mix well and season with salt. Cut the tomatoes into slices and tear the lettuce into larger pieces. Fry the bacon and the meat. At the end, place a slice of cheese on the meat.
- Spread the dressing on the cut hamburger, add the lettuce, meat with cheese, bacon, and tomatoes. Spread the dressing on the top of the bun and secure the entire hamburger with a toothpick.
