This universal gluten-free Linzer dough is an ideal base for Christmas baking. From one dough, you can easily prepare several types of popular cookies

Approach
  1. Mix all the ingredients for the basic dough together. Divide the dough into 4 parts and add the appropriate ingredients to each part according to the variation (cocoa, poppy seeds, cinnamon with cinnamon sugar, vanilla without flavoring).

  2. Wrap the prepared dough in cling film and place in the refrigerator for at least 2 hours, ideally overnight.

  3. Roll each piece of dough between two sheets of baking paper and cut out different shapes. Press the bear paws/rolls into pre-greased molds.

  4. Bake Linz cookies for 8–10 minutes at 175 °C. Bake bear paws/rolls for 10–12 minutes.

  5. After baking, let the cookies cool completely and then fill them:

    • vanilla Linz - strawberry jam

    • poppy seeds - lemon curdom

    • Cocoa Linecké - with Nutella (decorate the top with melted chocolate and sprinkles)

Good tip:

You can also make other cookies from this dough:
  • Add 1 tablespoon of ground nuts to form vanilla rolls.

  • With about 1 tablespoon of caramel pudding, you will get a dough suitable for caramel cookies that you can fill.

  • Ground pistachios or pistachio butter will make pistachio cookies.

  • By adding almond flour, you can make almond cookies.
