Gluten-Free Vanilla and Raspberry Mousse with Mirror Glaze
Vanilla sponge
- 2 eggs
- 70 g granulated sugar
- 70 g Universal mix Liana
- ½ tsp baking powder
Raspberry confit
- 200 ml of water
- 3 tbsp LianaVIT Raspberry
- 7 g Liana gelatin
- 30 ml cold water
- 1 handful of raspberries
Vanilla mousse
- 100 g white chocolate
- 250 ml whipping cream (100 ml warm + 150 ml cold)
- 50 g Liana Vanilla Stabilizer
- 4 g Liana Gelatin
- 20g water
- 8 g vanilla paste
Raspberry mirror icing
- 70 g white chocolate
- 50 ml vegetable whipping cream
- 100 g Liana Malina Stabilizer
- 100 ml of water
To finish
- edible flowers or confectionery decorations to taste

1. Vanilla sponge
Beat the eggs and sugar until foamy. Stir in the Liana Universal Mix mixed with baking powder. Spread the dough on a baking sheet lined with baking paper and bake for 7–10 minutes at 200 °C . Let cool and cut out hearts.
2. Raspberry confit
Pour cold water over Liana gelatin and let it swell. Heat the water with Liana Vit Malina and stir in the swollen gelatin. Place raspberries in a ball-shaped mold, pour over the raspberry mixture and freeze.
3. Vanilla mousse
Pour 100 ml of warm cream over the white chocolate and let it melt. Add the swollen Liana Gelatin and vanilla paste. Whip the remaining 150 ml of cream until semi-stiff with Liana Vanilla Stabilizer and gently fold into the chocolate mixture. This will keep the mousse beautifully light and fluffy.
4. Filling and freezing
Fill the silicone mold about ¾ full with mousse. Place frozen raspberry confit in the center and cover with vanilla sponge. Freeze, ideally overnight.
5. Raspberry mirror glaze
Melt the white chocolate in the vegetable cream. Mix the Liana Malina stabilizer with water and use an immersion blender to blend into the chocolate mixture.
6. Completion
Remove the frozen hearts from the molds and cover with mirror glaze. Decorate and let them cool slowly in the refrigerator.
