Gluten-free coconut-cocoa cupcakes
- 3 eggs

- 120 g powdered sugar
- 75 ml oil
- 75 ml water
- 50 g coconut
- 100 g Liana Cake mix
- 1/2 (6 g) baking powder (optional)

- 20-30 g cocoa

- Beat the egg whites with a pinch of salt.
- Gradually add the sifted powdered sugar mixed with Liana vanilla sugar.
- Beat in the egg yolks one at a time.
- Gradually add the oil, mix in the coconut, and alternately add the flour mixed with cocoa and baking powder and water. Finally, using a whisk, mix in the grated apple to make it more pliable.
- We fill the muffin tin in which we put the cupcakes. We can fill it with, for example, chocolate filling, fruit,...
- Sprinkle chocolate pieces on top.
- Bake in a preheated oven at 180 °C for 18-20 minutes.
- Prepare the cream according to the instructions on the stiffener package (always use only vegetable whipped cream, otherwise it will curdle). Spread it on the muffins. You can sprinkle with chocolate chips, freeze-dried fruit or nuts.
- Leave in the refrigerator for at least 1 hour and serve.
